Red carrots, as the name implies, are a deep red or burnt orange color with a textured outer skin. These carrots get their color from a substance called lycopene, which is also responsible for the red color in tomatoes and other fruits and vegetables. The red root can reach up to 8 inches in length and usually does not exceed 1 inch in diameter. Red carrots have a sweet taste with a mild herbaceous undertone.
