Lemon Grass – The narrow foliage of lemon grass ranges from blue-green to gold, and the flowers are white, cream or green, depending on the age of the plant. In general, there are more shades of purple and blue in the base of the plant, closest to the root source. Younger lemongrass will exhibit a sweet tropical citrus aroma reminiscent of natural fruit loops. The stem and bulb will be soft to the touch and cut. The older the plant, the more fibrous and less flavorful.
