Ataulfo Mango
Ataulfo mango, is also called young, baby, yellow, honey, Adaulfo, Adolfo or Champagne mango. This special variety of mango comes from Mexico, and is named after Ataulfo Morales Gordillo, who first cultivated it. Mangoes are oval in shape and have a slightly curved neck with a golden yellow exterior and bright yellow flesh. The skin of the Ataulfo mango is smaller and less fibrous than a standard mango. The skin is tough and the flesh is soft, sweet and juicy. When ripe and at room temperature, the Ataulfo mango has a sweet fragrance and a slight rippling of the skin.
Where does Ataulfo Mango grow?
The mango grows in a warm, humid climate where the temperature should not drop below 5 degrees Celsius. The proper temperature for this type of mango is 28 °C (28 °F) requiring sufficient annual rainfall. Ataulfo mangoes come from the Mexican states, Sinaloa, Michoacan, Nayarit, Jalisco, Veracruz and Chiapas. Ataulfo mango production is in the top 10 most important agricultural activities based on cultivated area. In addition to mango, products such as corn, coffee, beans and sugar cane are also in the top 10. It is estimated that there are about 18,000 hectares of ataulfo mangoes in production in Mexico alone. Importantly, store mangoes at room temperature until ripe; once ripe, they will keep for about a week in the refrigerator.
The taste
The Ataulfo mango is very creamy and threadless, with a sweet and intense flavor. This variety has a comparatively high percentage of edible flesh because of its small kernel.
